Asiago Cheese Salad

Asiago Cheese is an exceptionally flavorful bread. The loaves are made fresh by mixing real Asiago and Parmesan directly into the dough before baking. πŸ§€ It’s been a Kneaders staple since we opened.

For a more veggie-focused option, Asiago can also be used to make a delicious homemade salad. Be sure to request the loaves sliced at the bakery! It makes the recipe much easier.  πŸž

Ingredients

  • 4 C Asiago Cheese Hearth bread, torn into bite-sized pieces
  • 4 Tbsp olive oil
  • 6 slices thick-cut bacon
  • 3 Tbsp red wine vinegar
  • 2 Tbsp Dijon mustard
  • 2 Tbsp honey
  • 1 tsp fresh ground black pepper
  • 4 C packed baby arugula
  • 2 C cherry tomatoes, halved
  • 1 C loosely packed fresh basil, torn
  • 2 avocados, chopped
  • 2 Tbsp drained capers

Directions

  1. Preheat the oven to 400 degrees.
  2. Toss bread with 1 Tbsp oil on a rimmed baking sheet
  3. Toast in a single layer until golden brown, 10-15 min
  4. Cook bacon until crispy, drain on paper towel, and break into pieces
  5. Whisk vinegar, mustard, honey, and pepper in a large bowl. Gradually add remaining oil, whisking until smooth
  6. Add bacon, toasted bread, arugula, tomatoes, basil, avocados, and capers. Toss to coat
  7. Enjoy!
