Jacob’s Loaf

Baking brings us together, and one of our favorite memories is the day we spent with Jacob the Baker. We met Jacob in 2002 through the Make-A-Wish foundation, and his love of baking made him an immediate member of the Kneaders family.

4-year-old Jacob would ask him mom every morning, “What are we baking today?” He loved the comfort, sweetness, and delicious aromas of home cooking. His mom knew the stability and warmth of a home steeped in love would help Jacob as he struggled with an aggressive brain tumor.

Jacob said, “I want to be a baker because I want to spank the dough,” and we were lucky enough to help grant his wish! We’re excited to share the recipe he made – Jacob’s Loaf. You can see the recipe on our blog, link in bio.

Jacob visited again in 2017, and we spent the day baking more delicious bread. We’re grateful to Jacob and all members of the Kneaders family for memories shared, making each loaf special and every day one we enjoy together.

Ingredients

  • 1¼ C warm water
  • 2 ½ C all purpose flour
  • 1 tsp salt
  • 1 tsp instant yeast

Toppings

  • Flax seeds
  • Sunflower seeds
  • Sesame seeds
  • Poppy seeds
  • 1 egg

Directions

  1. Combine all ingredients and mix on low speed, 7 minutes.
  2. Put in an oiled bowl, cover, and rest until doubled in size, 1 hr.
  3. Place on floured surface and flatten to a rectangle 8 in wide. Fold sides, top and bottom to middle. Flip and return to oiled bowl. Cover and rest, 30 min.
  4. Place pizza stone in oven, preheat to 450°.
  5. Transfer dough to floured surface and flatten into a rectangle 10 in long, 3-4 in wide Fold in half lengthwise.
  6. Place on clean surface, seam side down, roll to 20 in length.
  7. Cut every 2½ inches, for 8 pieces, and gently shape into balls.
  8. Dip each ball in water and place on greased parchment paper. Make a circle with 7 balls with 8th in the middle, all touching.
  9. Sprinkle flax, sunflower, sesame, and poppy seeds on top. Cover and rise until almost double in size.
  10. Lightly beat egg with a fork or whisk and brush on top of rolls.
  11. Place rolls, with the parchment paper, on a cutting board. Slide off onto the hot pizza stone in oven. Bake for 10-15 min until golden brown.
