Roasted Cherry Tomato Caprese

This recipe is proof that sometimes you only need a few ingredients to create a bright and delicious dish! Bursting with flavor, this simple recipe makes for a perfect summer appetizer or light meal when you add a loaf our French Country Sourdough.

Ingredients:

2 pints cherry tomatoes

4 sprigs of thyme

4 garlic cloves, smashed

¼ cup extra-virgin olive oil

Kosher salt

8 ounces fresh mozzarella, room temperature, torn into large pieces

Flaky sea salt
Kneaders French Country Sourdough, sliced

Instructions:

Preheat oven to 350°

Toss tomatoes, thyme, garlic, and oil until combined

Using a rimmed baking sheet, spread out coated tomatoes in a single layer and roast until tomatoes are bursting and lightly browned, 40–45 minutes; let cool.

Arrange mozzarella on a platter and spoon the tomato mixture with juices over; sprinkle with flaky sea salt.

Serve with olive-oil-toasted bread
