Three Cheese Cauliflower Soup

Three Cheese Cauliflower comes from the Kneaders family recipes and has won competitions with its three types of cheese and pieces of cauliflower. 🧀⁠

Ingredients⁠

  • ¼ C butter⁠⁠
  • 1 C green onion, chopped⁠⁠
  • 1 head cauliflower⁠⁠
  • 1 ½ Tbsp minced garlic⁠⁠
  • 2 ¾ cup cheddar cheese⁠⁠
  • 3 thick slices pepper jack cheese, crumbled⁠⁠
  • 2 ⅓ cups Shirley J’s white cheddar base⁠ (or favorite cheddar base)⁠
  • 2 quarts hot water⁠

Directions⁠

  1. Break apart the head of cauliflower, leaving it in fairly large pieces.⁠
  2. In a large saucepan, place the butter, green onion, and cauliflower pieces.⁠⁠
  3. Cook on low heat with the lid on, stirring occasionally, for 25 minutes. The cauliflower will be very soft and broken into bite-sized pieces.⁠⁠
  4. While the veggies are cooking, roast the garlic in a pan until it is slightly brown. Add it to the veggies and stir well.⁠⁠
  5. When the veggies are done, add the white cheddar base and hot water. Use a whisk to stir until the base is well incorporated. Heat to 140 degrees.⁠⁠
  6. Slowly add the cheddar cheese and crumbled pepper jack into the pot, stirring while adding.⁠⁠
  7. Let the soup simmer for 10 minutes.⁠⁠
