Tomato Summer Sandwich

There is nothing quite like a fresh, ripe, juicy tomato right off the vine in the summer. So whether the tomatoes in your garden are ready to be picked or you’re going to enjoy a weekend farmers market, a summer tomato sandwich is in your future.

 

Ingredients:

 

3 Tbsp. extra-virgin olive oil

 

2 thick slices of Kneaders French Country sourdough bread

 

2 Tbsp. mayonnaise

 

2 thick heirloom or beefsteak tomato slices

 

Kosher salt, freshly ground pepper

 

1 tsp. drained capers

 

Instructions:

Toast two slices of bread in olive oil over medium heat in a cast-iron skillet. Once toasted, spread mayonnaise on bread and top with tomato slices, capers, salt, and pepper to assemble.
