Turkey Dumpling Soup

Our turkey is famous, and for good reason! Slow-roasted and pulled every day, it’s what makes our sandwiches and salads so delicious. 🦃

With such great turkey, we had to make a Turkey Dumpling Soup recipe to share, and light, flaky biscuits were the obvious pairing. We recommend putting the biscuits in the soup. 🥟

Soup Ingredients

  • 1 lb turkey tenderloin
  • ⅓ C chicken broth
  • 2 Tbsp butter
  • 2 stalks celery, chopped
  • 1 medium onion, chopped
  • ¼ cup all
  • purpose flour
  • ½ tsp salt
  • ¾ tsp poultry seasoning
  • 2 C water
  • 3 C chicken broth
  • 1 C cream
  • 3 medium Yukon gold potatoes, peeled and cubed
  • 1 (10 oz) package frozen mixed peas and carrots

Soup Directions

  1. Preheat oven to 350 degrees and spray baking dish with cooking spray
  2. Place turkey tenderloin in dish, add ⅓ cup chicken broth, cover with aluminum foil
  3. Bake for 45 minutes or until internal temperature reaches 170 degrees. Cool and shred Turkey. Set aside to be added later
  4. Melt butter in a saucepan over medium
  5. high heat. Add celery, onion, flour, salt and poultry seasoning to the saucepan and cook, stirring for 10 minutes
  6. Stir in water, broth, cream and potatoes. Cover and bring to a simmer
  7. Reduce the heat to medium and simmer, partially covered, about 10 minutes. Add peas and carrots and simmer until vegetables are tender
  8. Add the turkey to the saucepan and simmer until cooked through
  9. Divide among bowls and top with a fresh biscuit

Biscuit Ingredients

  • 2 C all
  • purpose flour
  • 4 tsp baking powder
  • ¼ tsp baking soda
  • ¾ tsp salt
  • 3 Tbsp butter
  • 1 Tbsp shortening
  • 1 C buttermilk

Biscuit Directions

  1. Preheat oven to 450°, line baking sheet with parchment paper
  2. In a mixing bowl, combine flour, baking powder, baking soda and salt
  3. With a pastry cutter, cut butter and shortening into dry ingredients
  4. Make a well in the crumbs and pour in the buttermilk and stir. Dough will be sticky
  5. Turn dough onto a floured surface, dust with flour and fold over on itself four times. Rotate 90 degrees after every fold. Press dough to 1″ thick
  6. Cut out biscuits with a 2″ biscuit cutter and place on baking sheet
  7. Bake until golden on top, 15
  8. 20 min
